San Choy Bow


San Choy Bow
 

This is a recipe that I got from my Mother-in-Law and is a favourite in the family and always well received when served up for dinner guests.

 Ingredients:

500g Pork Mince
1 Clove of Garlic - finely chopped
6 Dried Shitake Mushrooms
8-12 Lettuce Leaves
Oil for Cooking
3 Spring Onions - finely chopped
227g of Water Chestnut - finely chopped
225g of Bamboo Shoots - finely chopped
1 Tbsp. Soy Sauce        

Seasoning:
1 Tbsp. Oyster Sauce
1 Tbsp. Light Soy Sauce
1 tsp.    Sesame Oil
1/2 tsp. Ground Black Pepper
1 tsp.    Sugar

Sauce:
1 Tbsp. Oyster Sauce
1 Tbsp. Soy Sauce
1 Tbsp. Water
1 tsp.    Corn Flour

Method:
  1. Marinate pork mince with combined seasoning ingredients for 20 minutes in the fridge.
  2. Place the dried Shitake Mushrooms into some boiled water along with the Tbsp. of Soy Sauce and sit for 10 minutes. Discard the water and pat dry the re hydrated mushrooms with a paper towel. Finely chop and place to the side.
  3. Combine all of the Sauce ingredients and place to the side.
  4. Heat oil in a wok until hot and stir fry the garlic for 30 seconds.
  5. Add the marinated pork mince* and stir fry for 3-4 minutes.
  6. Add mushrooms - stir fry for 1 minute.
  7. Add water chestnuts, spring onions and bamboo shoots and continue to stir fry for another 2-3 minutes.
  8. Stir in combined sauce ingredients until mixture thickens.
  9. Serve with lettuce leaves*
Note: When cooking the mince cook like you would spaghetti mince and chop it until a fine consistency.

This is traditionally served by placing the desired amount of the pork mixture into a lettuce leaf, wrapping it with the leaf and then eat! Warning can be messy but oh so fun to eat.
